Pineapple Pecan Cake

This is one of my favorite deserts! Basically anything with homemade cream cheese frosting and toasted pecans I will love but the addition of pineapple gives it a sweet juiciness that takes this cake to a whole different level of amazing. Enjoy!!!


2 cups Flour

2 cups Sugar

2Tsp Baking Soda

2 whole eggs

20oz fluid can crushed pineapple with juice

1 cup chopped toasted pecans

8oz , cream cheese softened

1 stick butter

2cups Powder Sugar

1 Tbls Vanilla


Preheat oven to 350 degrees

Grease a 9×13 baking dish and set aside.

Mix dry ingredients together, the flour, sugar, and baking soda.

Slowly stir in the eggs, crushed pineapple with juice and chopped toasted pecans. Stir just until moistened.

Pour into greased baking dish.

Bake at 350 degree for 30-35 min until toothpick inserted in center comes out clean.


While cake cools, make the frosting.

In a medium bowl, using an electric mixer, mix the cream cheese, butter, powder sugar, and vanilla together until smooth.

Once cake is completely cooled, using a spatula, Frost cake generously.
