This recipe is a go to for any Summer BBQ Potluck. This Potato Salad was my moms recipe and by far the best I have ever had. The flavor combination and the dressing to potato ratio is just perfect, plus it has BACON! who doesn’t love bacon?! hope you enjoy it as much as I have.
- You can sans the Bacon to make it vegetarian and it is still amazing!
4 Rustic Potatoes, peeled & Cubed
½ Cup Thinly Sliced Celery
½ Fine Chopped Onion
½ lb Bacon- cooked Crispy
1 Jar (small) diced Pimentos
1 ½ cup Mayo
Salt & Pepper to taste
Cook Bacon and set aside. Boil cubed Potatoes, until soft and cooked through. Drain and set aside to cool. While Potato and Bacon cool cut & Chop celery and onion. Once Potato’s are cool mix all ingredients together, add more mayo, salt, and pepper as needed. Refrigerate , serve cool.
